ABout Me
I am Waltraud. I know what it feels like to miss really good, gluten-free sourdough bread. I kept thinking “What if I could recreate the delicious sourdough bread of my childhood in Germany?”
But there was no support other than my prior sourdough baking skills and my research scientist mind to figure it out.
Instinctively I knew - there had to be a way!
I started to experiment, develop, and create a plethora of delicious, gluten-free recipes based on the traditional recipes of my family. Over time more eager bakers wanted to learn the art and science of gluten-free sourdough baking.
Wouldn’t it be great to have a safe space to learn from others who have gone before you? I desperately craved a community to share with others all that I learned.
Out of this longing, the Gluten-free Sourdough Lab was born!
